About
A long-fermented pizza dough from French Guy Cooking that produces a light, airy crust with excellent structure. The extended rise time develops flavor and makes it easy to stretch.
Ingredients
- 520g bread flour
- 350ml water
- 16g salt
- 1g instant yeast (or 2g fresh yeast)
Instructions
1. Mix
- Add water to a large bowl.
- Dissolve salt in the water.
- Add a small amount of flour and mix well.
- Add yeast and mix.
- Gradually add the remaining flour.
- Knead for about 20 minutes, or until the dough is smooth and elastic.
2. First Rise
- Cover the bowl and let the dough rise for 2 hours at room temperature.
3. Ball and Final Rise
- Divide the dough into 3 equal portions and shape into smooth balls.
- Place in an airtight container and let rise for 6 hours.
4. Use
- Stretch and top as desired, then bake at your oven's highest temperature on a preheated stone or steel.
