About
Soft, pillowy brioche buns enriched with butter, eggs, and milk. A great all-purpose burger or slider bun.
Ingredients
- 240ml warm water
- 45ml warm milk
- 8g active dry yeast
- 30g sugar
- 2 eggs
- 360g bread flour
- 40g all-purpose flour
- 8g salt
- 35g butter, softened
- 1 egg (for egg wash)
Instructions
1. Activate Yeast
- Combine warm water, warm milk, yeast, and sugar. Wait 2 minutes until foamy.
- Add 2 eggs and mix well.
2. Make Dough
- Combine bread flour, all-purpose flour, and softened butter together.
- Slowly pour the yeast mixture into the flour mixture while mixing.
- Knead with a mixer until the dough is smooth and elastic, about 5–8 minutes.
3. First Rise
- Cover and let rise for 1½ hours.
4. Shape and Second Rise
- Divide the dough into 8 equal pieces.
- Roll each into a smooth ball.
- Let rest for 30 minutes to 1 hour.
5. Bake
- Preheat oven to 205°C. Place a tray of water in the oven.
- Brush buns with egg wash.
- Bake until golden brown.
