About
A simple, versatile yeasted dough that works for pizza, flatbread, or sandwich loaves. Olive oil gives it a slightly richer flavor and a softer crumb than a lean pizza dough.
Ingredients
- 1.5g instant yeast
- 2g sugar (for activation)
- 60ml warm water (under 48°C, for activation)
- 240ml water
- 12g sugar
- 18g salt
- 30ml olive oil
- 300g bread flour
Instructions
1. Activate Yeast
- Combine yeast, 2g sugar, and 60ml warm water. Stir and let sit a few minutes until foamy.
2. Mix
- Add flour, then remaining water and olive oil.
- Knead until smooth, stretchy, and no longer sticky.
3. First Rise
- Cover and let dough double in size (~1 to 1.5 hours).
4. Fold and Second Rise
- Fold the dough over itself.
- Let rise one more time.
5. Shape and Bake
- For pizza or flatbread: Stretch thin, add toppings, bake until the outside is lightly golden.
- For loaves: Divide into 2 portions. Bake carefully to avoid popping large bubbles on the surface.
- Tip: If baking as a single loaf, it may not bake through before the outside colors. Split into 2 for better results.
