About
Japanese-style Salisbury steak (hambagu) in a simple tomato sauce, topped with a fried egg. The milk-soaked breadcrumbs keep the patties incredibly tender and moist.
Ingredients
- 300g mixed ground pork and beef
- 1 onion, very finely minced
- 4 egg (for frying on top — plus 1 extra egg mixed into patties per batch)
- 28g breadcrumbs
- 30ml milk
- 2g salt
- Black pepper, to taste
- 15ml olive oil
- 2 cloves garlic
- 1400g diced tomatoes (about 1 can for 4 servings)
- Bay leaves
Instructions
1. Cook Onions
- Mince the onion very finely. Fry in olive oil until translucent. Set half aside for the sauce.
- Let the onions cool before adding to the meat.
2. Make Patties
- Soak breadcrumbs in milk and beat 1 egg.
- In a bowl, combine ground meat with salt and pepper. Mix until combined.
- Add half the cooked onions, soaked breadcrumbs, and beaten egg. Mix thoroughly.
- Divide into portions. Toss each portion between your hands to help bind the meat.
- Shape into patties with a small dimple pressed into the center of each.
3. Brown Patties
- Fry patties in a pan until both sides are browned. Remove from heat.
- Tip: It's fine if they're not cooked through — they'll finish in the sauce.
4. Make Sauce and Finish
- In the same pan, add olive oil, garlic, and bay leaves. Fry until fragrant.
- Add remaining onions and the diced tomatoes. Season with salt and pepper.
- Return patties to the pan and stew in the sauce for 7 minutes.
- Remove bay leaves.
- Serve each patty topped with a fried egg.
